Our commitment begins with the choice of wood, because only with careful selection and subsequent rigorous natural maturation, it is possible to obtain a high standard product.
The most commonly used wood is the oak, from the best countries of origin such as Slavonia (Croatia, Bosnia), Hungary, Austria and France. For our barrels, we mainly choose Quercus sessilis, whose characteristics are defined by compactness, fine grain and richness of aromatic components.
On request, we can also process other woods such as acacia, cherry, chestnut, ash and mulberry. The staves are matured outdoors, for a period of 2 to 4 years, at our locations in Italy and Austria. The period of maturation is related to the seasonal conditions and the strength of the wood. Air, sun and rain enable a gentle and gradual transformation of the components of the wood.
